A week seems enough for a light blonde so today was time for bottling. I emptied out a few bottles of No1 rather than take some labels off - I'll keep a few for a while but I don't think it's going to get any better. Gave them a scrub and chucked them in the dishwasher, then racked with 40g of granulated sugar, which is about right for the amount of beer I had. Got eight and a half bottles out of it, and they're in the garage for secondary fermentation. The half was tested, naturally, it's has a long bitterness with a hint of  pine and a mild fruity aroma. It's come in between 3-3.5%, better than the last brew, which was ultimately below 3% - Brewsmith calculated it to be 2.9% - so the next thing to do is try and get some strength. I'd like the blonde, which will now be called Electric Light, to be around 3.8%, the bitter, which I'm going to add a bit more caramel to, to be about 4%, and the next brew, another small one tomorrow all being well, a stout at around 4.8-5%, and then I'm planning an IPA in the mid fives. Trying to steepen that learning curve a little now that autumn is here.
