I thought about this weeks' brew quite a bit as I'm now drinking AG#2 and #3 and trying to work out what to do with them. AG#3, Challenger, is an attempt at a traditional Yorkshire bitter and despite the current batch not carbonating very well due to a fairly slapdash racking it tastes pretty good and would be a good candidate for a large run. So I decided to have another go at it and leave my Christmas beer for next week. Then, when going through the grain box, on a whim I decided to substitute the dark crystal malt for pale chocolate malt. The hops are the old favourites Challenger and Styrings (finished my first pack at last) with Fuggles for aroma. The result is, naturally, considerably darker, around 30 EBC against 17 but still has a bitter look to it and is chocolatey rather than caramel out of the boiler. I hit the mark with the OG at 1041, which should give an ABV of about 3.8%. It's also remarkably active in FV with half a packet of Windsor yeast, better than Nightwatchman (AG#3), which is the other brew I've done with that. It can sit in the FV for a week or so, then I'll think about bottling.
