I need to do something with the brew as I'm not going to be able to next week so after filling the garage with bottles last time I'm going to give casking a go for a couple of weeks. As mentioned Nottingham yeast doesn't get as lively as Safale-04 but it has done the job so I have a lovely clear bucket of beer that's measuring about 1010, which is just what it should be, about 4%. Out of the testing jar it tastes very good, a slight citrus fruitiness with a dry finish, not unlike Thwaites Wainwright, one of my touchstones for this project, which is fine by me. I bought a King Keg kit from Balliihoo, who get yet another mention as they do next day delivery, so I'm cleaning it out ready to fill and go for the next stage.
Update: It's now filled and gone in the garage for a couple of weeks. I've brought some bottles of No 1 out for the official tasting.
